A simple 5 step Penne Alla Vodka, creamy and decadent. Spice up your next pasta night with this modern classic.
A Simple Penne Alla Vodka
300 grams of The Pasta Emporium Penne
½ packet of our Spicy Arrabbiata Sugo (the rest can be stored on your fridge or freezer)
½ cup heavy cream
½ cup of grated Italian parmesan (little extra for serving)
2 tbsp. Vodka
Reserve 1 cup of pasta water before draining
Basil for serving (optional)
ChillI flakes for serving (optional)
1.Bring pot of salted water to boil. Once rapidly boiling add your Penne and cook until al dante (our fresh Penne cooking time will be around 3mins) Once cooked be sure to drain well and reserve 1 cup of pasta water
2. While your pasta cooks, in a pan or skillet on a medium heat add your Spicy Sugo and stir frequently until your sauce starts to darken (around 4-5mins)
3. Add vodka to pot and stir to incorporate, scraping up any browned bits from the bottom of the pot.
4. add 1/4 cup of pasta water and your heavy cream, stirring to combine. Add half the Parmesan and stir until melted.
5. Turn off heat and stir in cooked pasta. Fold in remaining Parmesan, adding more pasta water (about a tablespoon at a time) if the sauce is looking dry. Serve topped with more Parmesan and torn basil leaves and chilli flakes if you wish
NOTE: Any of our fresh short pasta will work well with this recipe.
