PANGRATTATO [Crispy Breadcrumbs for Pasta]

Pangrattato is simply leftover breadcrumbs that are fried with flavorings and olive oil to create a crispy crunchy,
savoury addition to pasta dishes. You can also make this ahead of time and store in an airtight container.
INGREDIENTS
- 2tbs a good quality olive oil
- 1/2 cup breadcrumbs (I like to use panko)
- 1 garlic clove (crushed)
- pinch of salt & pepper
- 1/4 cup fresh parsley (finely chopped)
- pinch of chilli flakes (optional if you like is spicy)
METHOD
- on a medium heat, heat up your olive oil until nice at hot
- add your breadcrumbs and mix to coat crumbs in oil. stirring until crumbs are browned and crisp
- add in your garlic, parsley, salt, pepper & chilli and mix thoroughly for another 1-2 mins (Carefully to not burn your breadcrumbs)
Let cool and serve over the top of your pasta dish. Or store in an airtight container for 1-2 weeks.
